Spaghetti Chicken Casserole
- 3 c. diced cooked chicken
- 1/4 c. butter
- 1/2 green pepper
- 1 medium onion
- 1/2 lb. sliced mushrooms
- 1 can chicken broth
- 2 cans cream of mushroom soup
- 1 jar red pimentos
- 1/2 lb. grated Jack cheese
- 1/2 lb. uncooked spaghetti
- Cook spaghetti, let cool.
- Boil whole chicken or use pieces of chicken equal to approximately 1 whole chicken.
- One whole chicken will give you approximately 3 cups of chicken.
- Cool and dice. Brown onion, green pepper and mushrooms in butter.
- Place in large mixing bowl the ingredients along with the broth, soup and red pimentos plus grated Jack cheese.
- Put in large 9 x 16-inch pan. Bake in preheated 350u0b0 oven for 1/2 hour to 45 minutes, uncovered.
