Mexican Chicken
- 2 to 3 chickens
- Monterey Jack cheese
- Longhorn cheese
- 2 cans cream of mushroom soup
- 2 cans cream of chicken soup
- 2 cans chicken broth
- 1 large can of tomatoes, sliced
- Doritos chips
- jalapeno peppers
- green onions, cut up
- white onions, chopped
- Cut up chicken (if using a whole chicken).
- Boil until done. Skin chicken.
- Combine soups, broth, tomatoes and jalapeno peppers (diced) together.
- Warm until smooth and remove from stove.
- After sauce is ready, layer Doritos, chicken, onions, sauce and cheese. Cook in oven for about 20 minutes.
- Do not overcook.
- Use your judgment on cooking time.
- You don't want it to be soupy or dry. Oven temperature should be around 325u0b0.
