Mr. Food'S Date Nut Bread
- 2 cups dates, pitted and chopped
- 2/3 cup firmly packed brown sugar
- 1/2 cup honey
- 2 tablespoons butter or 2 tablespoons margarine
- 1 cup very hot water
- 1 egg, beaten
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- In a large bowl, combine dates, sugar, honey, and butter; add hot water, stir and let stand for 15 minutes.
- Preheat oven to 325 degrees.
- Stir egg and vanilla into date mixture.
- In a separate bowl, combine remaining ingredients.
- Stir the flour mixture into the date mixture.
- Pour batter into a greased 9x5 inch loaf pan.
- Bake for 1 hour or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then remove and let cool completely on a wire rack.
