Christmas Rock Cookies
- 2 c. butter
- 3 c. brown sugar
- 4 eggs
- 5 c. plain flour
- 2 tsp. cinnamon
- 2 tsp. salt
- 2 tsp. baking soda
- 2 lb. diced dates
- 1 1/2 lb. candied cherries
- 1 lb. box white raisins
- 3 slices candied pineapple
- 1 lb. English walnuts
- 1/2 lb. split almonds
- 1/2 lb. Brazil nut pieces
- 1 lb. pecan pieces
- 1 Tbsp. vanilla
- Cream together the butter and brown sugar.
- Add the eggs; mix well.
- Add all other ingredients; mix well.
- Drop by tablespoonfuls onto cookie sheet.
- Bake for 13 minutes in preheated oven at 350u0b0.
- These will keep in the freezer for quite a while.
- Makes 400.
