Cold Weather Chili
- 2 lb. extra lean ground beef
- 1 large onion, chopped
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1 c. green peppers, chopped
- 1 medium tomato, chopped
- 1 Tbsp. crushed red peppers
- 1 (40 oz.) can red kidney beans, drained and rinsed with cold water
- 1 (4 oz.) can green chilies or jalapeno peppers, drained
- 2 Tbsp. ground cumin
- 4 Tbsp. chili powder
- 1 tsp. Tabasco sauce
- 12 oz. tomato paste
- 8 oz. tomato sauce
- water to desired consistency
- Lightly brown ground beef in a 5-quart pan or Dutch oven; add salt and pepper.
- Add onion and green peppers and cook until soft. Add tomato sauce and paste; dilute with water to desired consistency.
- Add all remaining ingredients to chili mixture. Cover and simmer for 1 hour, stirring occasionally.
- Remove one cup of mixture and process in blender until smooth; pour processed mixture back into chili, stir well.
