Wild Grits
- 1 c. white hominy grits
- 5 c. boiling water
- 1 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 c. Parmesan cheese
- black pepper
- 1 egg, beaten
- 1 Tbsp. milk
- 1/2 c. Italian flavored bread crumbs
- 2 Tbsp. butter
- 1 tsp. onion flakes
- Add grits to boiling salted water.
- Reduce heat and simmer 25 to 30 minutes, stirring occasionally. Cool 30 minutes.
- Add baking powder, 3/4 cup cheese, onion and pepper.
- Mix well. Combine eggs and milk.
- Add to cooked grits.
- Pour mixture into well-greased 2-quart baking dish. Top with bread crumbs and remaining cheese. Dot with butter.
- Bake at 350u0b0 for 25 minutes or until browned on top.
- Great with chicken or meat dishes.
