Scallops And Shrimp With Yellow Rice
- 1 large onion, chopped
- 1 garlic clove, minced
- 1 cup long-grain rice, uncooked
- 1/2 teaspoon ground turmeric
- 1 (14 1/2 ounce) can chicken broth
- 3/4 cup water
- 1/2 lb medium shrimp, uncooked, peeled and deveined
- 1/2 lb bay scallop
- 1 cup frozen peas
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- In a large skillet, saute onion and garlic in oil until tender.
- Add rice and tumeric.
- Stir to coat.
- Stir in broth and water.
- Bring to a boil.
- Reduce heat, cover and simmer for 15 minutes or until rice is tender.
- Stir in shrimp, scallops, peas, salt and pepper.
- Return to a boil.
- Reduce heat, cover and simmer for 5 minutes or until shrimp is pink.
