Corn Bread Stuffing
- Jiffy corn bread mix
- 3 to 4 stalks and leafy celery, diced
- 4 to 8 Tbsp. butter
- 1 onion, fresh chopped
- salt and pepper to taste
- 1 pkg. seasoned bread stuffing
- 1 small onion, chopped
- 4 boiled eggs, chopped
- 1/2 tsp. poultry seasoning
- giblets (from turkey)
- Prepare corn bread per package; cool and cube.
- Boil giblets, celery, 1 chopped onion, butter, salt and pepper in water until giblets are cooked through and veggies are tender. Pull out giblets and dice up.
- Mix corn bread, stuffing, eggs, fresh onion, poultry seasoning, giblets and veggies from broth, pouring broth over to moisten but not saturate mixture.
- Don't work a lot, just to mix.
- Stuff into turkey or heat in oven separate pan until heated completely through.
- Heating it outside the turkey makes it crispy on top.
