Pina Colada Pound Cake
- 1 pkg. light yellow cake mix
- 1 (4 serving size) pkg. instant coconut cream pudding mix
- 1/2 c. water
- 1/4 c. cooking oil
- 4 eggs
- 1 (6 oz.) can frozen pineapple juice concentrate
- 1 small can crushed pineapple, drained
- 1/2 c. frozen coconut, thawed
- 1 1/2 c. sifted powdered sugar
- 1 Tbsp. rum flavoring
- Grease and flour 10-inch tube pan.
- Set aside.
- In a large mixer bowl, combine cake mix, pudding mix, water, oil, eggs and 1/3 cup pineapple juice.
- Beat with electric mixer on low speed until combined.
- Beat on medium for 2 minutes.
- Add pineapple and coconut; stir by hand until blended.
- Pour into pan.
- Bake at 350u0b0 for 45 to 50 minutes, or until cake tests done.
- Cool; remove from pan.
