Light And Easy Chicken Divan
- 6 skinless, boneless chicken breasts, cooked
- 1 lb. fresh broccoli, cut into pieces
- 1 (10 3/4 oz.) can chicken broth
- 4 Tbsp. cornstarch
- 1 c. skim milk
- 1 c. plain yogurt
- 1 Tbsp. curry powder
- 8 oz. low-fat Cheddar cheese, grated
- Preheat oven to 350u0b0.
- Bake chicken breasts 30 minutes. Steam broccoli
- just
- until
- it
- turns
- bright
- green.
- Bring chicken broth to a boil in a saucepan.
- Dissolve cornstarch in cold
- milk, then
- slowly
- add
- to
- chicken broth.
- Stir until mixture reaches
- a
- boil.
- Stir
- in
- yogurt and curry powder. Place broccoli and chicken in baking dish and cover with curry mixture. Top
- with grated cheese and bake uncovered for 25 to 30 minutes.
