Mrs. Perini'S Special Chicken
- chicken breasts, skinned
- raw, fresh vegetables (broccoli, cauliflower, carrots, etc.)
- 2 cans cream of chicken soup
- 3/4 c. mayonnaise
- 1 c. milk
- shredded Cheddar cheese
- bread crumbs
- butter or margarine
- Grease bottom of 9 x 13-inch baking dish.
- Mix soup, mayonnaise and milk together.
- Pour some of the mixture in the bottom of the baking dish.
- Layer fresh raw vegetables on the soup mixture.
- Place skinned chicken breasts over raw vegetables and pour rest of soup mixture over the chicken and vegetables, covering completely.
- Top with shredded Cheddar cheese, then sprinkle bread crumbs over the top.
- Dot with butter.
- Bake at 375u0b0 for one hour.
- Serve over cooked rice.
