Paella
- 1 1/2 lb. chicken pieces
- 3 Tbsp. olive oil
- 3 links chorizo
- 1/2 c. smoked ham, cubed
- 1 yellow onion, chopped
- 1 green pepper, chopped
- 1 tomato, chopped
- 2 cloves garlic, crushed
- 1 1/2 c. long grain rice
- 2 (10 oz.) cans chicken broth
- 1 tsp. saffron
- 1 lb. raw shrimp, shelled and deveined
- 1/4 c. pimento strips
- 1/2 pkg. frozen green peas
- Brown chicken pieces in olive oil.
- Add chorizo and break apart with a fork.tdd ham and brown slightly. Stir in onion, green pepper, tomato and garlic. Push vegetables and meat aside. Add rice to center of pan and saut 5 minutes.
- Then add chicken broth and stir in saffron. Cover. Simmer 25 minutes. Stir in shrimp, pimento and peas. Simmer 5 to 10 minutes.
