Louisiana Dirty Rice Casserole
- 1 1/2 lb. ground chuck or 1 lb. chuck and 1/2 lb. sausage
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 rib celery, chopped
- 1 small jar diced pimento
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 c. long grain rice
- Cajun seasoning to taste
- Season beef and put into a 3-quart microwave casserole dish with cover.
- Add next three ingredients and cover.
- Microwave on High (700 watts) for 5 minutes.
- Remove from oven and stir to crumble beef.
- Stir in pimento and cans of soup.
- Add rice and seasoning to taste.
- Mix well.
- Microwave on High 5 minutes, then on Medium-low (350 watts) for an additional 20 minutes.
- Remove from oven and stir.
- Microwave on Medium-low about 10 minutes longer or until liquid is absorbed and rice is done.
- Remove and let sit 5 minutes.
- Serves 4 to 6.
