Banana Cake

  1. Cream together shortening and sugar in mixing bowl until light and fluffy at medium speed.
  2. Add eggs; beat 2 more minutes.
  3. Add bananas; beat 2 more minutes.
  4. Sift together flour, baking soda, powder and salt.
  5. Add dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition.
  6. Add vanilla. Beat 2 minutes.
  7. Stir in nuts.
  8. Turn into 2 greased and floured 9-inch round cake pans.
  9. Sprinkle 1/2 cup coconut on each layer. Bake in 375u0b0 oven 25 to 30 minutes or until cakes test done.
  10. Cool in pans on rack 10 minutes.
  11. Remove and cool on racks.
