Favorite Chicken And Stuffing
- 1 (6 oz.) pkg. seasoned stuffing mix
- 8 (4 oz.) boneless skinless chicken breast halves
- 1 Tbsp. vegetable oil (yes, canola)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 Swiss cheese slices (2 oz.), halved
- 2 Tbsp. margarine, melted
- 1 (10 3/4 oz.) can cream of chicken soup (undiluted)
- 1/4 c. water
- Prepare stuffing mix according to package directions. Transfer to a greased 13 x 9 x 2-inch baking dish.
- In a large skillet, brown chicken in oil.
- Sprinkle with salt and pepper; place over stuffing.
- Top with cheese.
- Drizzle with butter. Combine soup and water; spoon over stuffing.
- Cover and bake at 350u0b0 for 40 minutes.
- Uncover; bake 10 to 15 minutes longer or until chicken juices run clear.
- Yield: 8 servings.
