Megan'S Taco Salad
- 2 Tbsp. finely chopped onion
- 1 lb. ground beef
- dash of salt
- dash of pepper
- 2 tsp. sugar
- chili powder to taste
- 3 Tbsp. Open Pit barbecue sauce
- Brooks ketchup
- 1 head lettuce
- 1 pkg. Velveeta, shredded
- fat-free Thousand Island dressing
- taco chips
- In skillet, brown onion and ground beef.
- Salt and pepper to taste.
- Drain well.
- Add sugar; cook for 1 minute.
- Add chili powder; cook another minute.
- Add barbecue sauce; mix.
- Add only enough ketchup to color meat (should be a little dry).
- Cook for 2 minutes; remove from heat.
- Chop the well drained head of lettuce; add cheese.
- Add only enough dressing to lightly cover.
- Add meat to lettuce; mix.
- Crumble chips on top and serve.
- Do not mix ahead, or lettuce and chips will become soggy.
