Creamy Vegetable Soup

  1. In a large kettle, saute onion in butter until transparent, not browned.
  2. Add the sweet potatoes, zucchini and broccoli.
  3. Saute lightly for 5 minutes or until crisp-tender.
  4. Stir in broth. Simmer for a few minutes.
  5. Add potatoes and seasonings.
  6. Cook another 10 minutes or until vegetables are tender.
  7. Stir in cream (milk) and heat.
  8. Makes about 4 quarts.
