Caramel Apple Cake
- 1 1/2 c. buttermilk baking mix (Bisquick baking mix)
- 2/3 c. granulated sugar
- 1/2 c. milk
- 2 c. sliced, peeled cooking apples (about 2 medium)
- 1 Tbsp. lemon juice
- 3/4 c. packed brown sugar
- 1/2 tsp. ground cinnamon
- 1 c. boiling water
- sweetened whipped cream or ice cream
- Heat oven to 350u0b0.
- Mix baking mix and granulated sugar.
- Beat in milk until smooth.
- Pour into ungreased 9 x 9 x 2-inch square pan. Top with apples. Sprinkle with lemon juice.
- Mix brown sugar and cinnamon. Sprinkle over apples.
- Pour boiling water over apples. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Serve warm with sweetened whipped cream. Makes 6 servings.
