Christmas Cake
- 8 eggs
- 2 c. sugar
- 3 Tbsp. vanilla
- 1 Tbsp. almond flavoring
- 3 c. all-purpose flour
- 3 tsp. baking powder
- 2 tsp. salt
- 8 c. pecans, quartered
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 2 lb. dates, pits removed
- Beat eggs
- well.
- Add
- sugar and continue beating until well mixed.
- Add
- vanilla
- and almond flavoring. Sift together flour, baking
- powder
- and
- salt.tet aside.
- Combine pecans, cherries, pineapple
- and
- dates.
- Sift flour mixture over this and mix well, then add eggs and sugar mixture.
- Mix thoroughly.tour into greased and floured cake pans.
- Bake over a pan of water for 1 1/2
- hourstn
- a 250u0b0 oven.
- Serve when cool. Like a fruit cake, portions should be kept small.
