Christmas Cake

• 8 eggs
• 2 c. sugar
• 3 Tbsp. vanilla
• 1 Tbsp. almond flavoring
• 3 c. all-purpose flour
• 3 tsp. baking powder
• 2 tsp. salt
• 8 c. pecans, quartered
• 1 lb. candied cherries
• 1 lb. candied pineapple
• 2 lb. dates, pits removed

1. Beat eggs
2. well.
3. Add
4. sugar and continue beating until well mixed.
5. Add
6. vanilla
7. and almond flavoring. Sift together flour, baking
8. powder
9. and
10. salt.tet aside.
11. Combine pecans, cherries, pineapple
12. and
13. dates.
14. Sift flour mixture over this and mix well, then add eggs and sugar mixture.
15. Mix thoroughly.tour into greased and floured cake pans.
16. Bake over a pan of water for 1 1/2
17. hourstn
18. a 250u0b0 oven.
19. Serve when cool. Like a fruit cake, portions should be kept small.
