Tuna Stuffed Potatoes

  1. Preheat oven to 400u0b0.
  2. Cut a thin slice from one side of each potato, scoop out the interior.
  3. Place in bowl.
  4. Mash, adding the hot milk.
  5. Whip until fluffy.
  6. Add green onions, egg and butter, whipping mixture well.
  7. Season with salt and cayenne pepper.
  8. Fold in tomato and tuna.
  9. Pile this mixture into potato skins, mounding 1 teaspoon high.
  10. Sprinkle with Parmesan cheese.
  11. Place into baking pan.
  12. Bake at 400u0b0 for 10 minutes until potatoes are heated. Yields 4 servings.
