Tuna Stuffed Potatoes
- 4 large baked potatoes
- 1/2 c. hot milk
- 2 green onions, minced
- 1 egg
- 2 Tbsp. butter
- 1 tsp. salt
- dash of cayenne pepper
- 1 medium tomato, diced
- 1 (7 1/2 oz.) can tuna, drained
- 2 Tbsp. grated Parmesan cheese
- parsley for garnish
- lemon slices for garnish
- Preheat oven to 400u0b0.
- Cut a thin slice from one side of each potato, scoop out the interior.
- Place in bowl.
- Mash, adding the hot milk.
- Whip until fluffy.
- Add green onions, egg and butter, whipping mixture well.
- Season with salt and cayenne pepper.
- Fold in tomato and tuna.
- Pile this mixture into potato skins, mounding 1 teaspoon high.
- Sprinkle with Parmesan cheese.
- Place into baking pan.
- Bake at 400u0b0 for 10 minutes until potatoes are heated. Yields 4 servings.
