Peaches And Cream Cake
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 (3 1/2 oz.) pkg. vanilla pudding (not instant)
- 1/2 c. sugar and 1 Tbsp.
- 1/2 tsp. cinnamon
- 3 Tbsp. butter or margarine, soft
- 1 egg
- 1/2 c. milk
- 1 (15 oz.) can sliced peaches, drain and save 3 Tbsp. juice
- 1 (8 oz.) pkg. cream cheese, soft
- Combine flour, baking powder, salt, pudding, butter, egg and milk; beat for 2 minutes.
- Pour into a greased 9-inch deep dish or regular pie pan.
- Lay peach slices over batter.
- Combine cream cheese, 1/2 cupful of sugar and 3 tablespoons of peach juice. Beat for 2 minutes.
- Spread evenly over top of cake, leaving 1 inch around edge.
- Combine 1 tablespoon of sugar and 1/2 teaspoon of cinnamon.
- Sprinkle over top.
- Bake at 350u0b0 for 30 to 35 minutes.
- Serves 8.
