Hungarian Szekely Gulyas

  1. Steam chopped pepper and onions for 15 minutes.
  2. Add oil and meat and cook for 15 minutes longer.
  3. Add salt, paprika, garlic and tomatoes.
  4. Cook until meat is tender, approximately 1 hour. Simmer slowly for longer time to enhance flavors.
  5. Drain sauerkraut before adding.
  6. It may be rinsed, if desired, before adding.
  7. Simmer for 15 to 25 minutes longer.
  8. Top each serving with sour cream.
  9. (This can be prepared in a crock-pot/slow cooker.)
