Corn Chip Soup
- 1 lb. + ground beef, browned and drained
- 1/2 c. onion, chopped and browned
- 1 (30 oz.) can diced tomatoes
- 1 (16 oz.) can tomato sauce
- 1 (25 oz.) taco seasoning mix
- grated cheese
- sour cream
- chopped green onions
- 3 c. water
- 1 (16 oz.) can kidney beans
- 1 (16 oz.) can chili beans or canned chili with beans
- garlic salt
- 2 diced avocados
- corn chips
- In a large pan, cook ground beef until browned; season with garlic salt.
- Add onion and cook until limp or browned.
- Add water, undrained beans, tomatoes, tomato sauce and taco seasoning mix.
- Simmer, covered, about 15 minutes.
- Just before serving, add diced avocado.
- Pass grated cheese, sour cream and corn chips for topping on each serving.
- Serves 10.
