Round Steak Stroganoff
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 - 2 lbs beef round steak, trimmed and cut into thin strips
- 3 tablespoons butter or 3 tablespoons margarine
- 1 cup chopped onion
- 1 garlic clove, minced
- 1 (14 1/2 ounce) can beef broth
- 3 tablespoons chili sauce
- 1/2 teaspoon ground mustard
- 1 lb fresh mushrooms, sliced
- 2 cups sour cream
- hot cooked egg noodles
- minced fresh parsley (optional)
- Combine flour, paprika, salt, and pepper in a large resealable plastic bag.
- Add beef, a few pieces at a time, and shake to coat.
- Ina a large skillet, melt butter over medium heat.
- Brown half the beef at a time; remove.
- Add onion and garlic; saute until tender.
- Return beef to the pan.
- Add broth, chili sauce, mustard, and mushrooms; cover and simmer for 1 hour or until the beef is tender.
- Stir in sour cream; heat gently but do not boil.
- Serve immediately over noodles.
- Garnish with parsley, if desired.
