Live-Longer Casserole
- 1 onion, chopped
- 1 c. sliced fresh mushrooms
- 1 Tbsp. low-fat margarine
- 2 pkg. frozen spinach, thawed or 3 c. chopped fresh spinach
- 1 1/2 c. chopped tomatoes
- 1 3/4 c. diced zucchini
- 1 1/2 tsp. salt (optional)
- 1/2 lb. spaghetti, broken in half
- 1 tsp. nonstick cooking spray
- 3 oz. reduced fat Swiss cheese
- 3 oz. reduced fat Cheddar cheese
- In a large skillet over medium heat, saute onion and mushrooms in margarine.
- In a medium bowl mix together spinach, tomatoes, zucchini and salt (optional); add to onion-mushroom mixture. Simmer 5 minutes.
- Cook spaghetti 15 minutes in boiling water, drain and add to vegetable mixture.
- Spray 9 x 13-inch casserole with cooking spray; pour vegetable mixture into casserole.
- Mix cheeses together and sprinkle on top.
- Bake at 350u0b0 for 30 minutes. Serve hot.
