Hearty Fiesta Burgers
- 3/4 c. finely crushed saltine crackers (21 crackers)
- 2 eggs
- 1/4 c. chopped onion
- 1/4 c. catsup
- 2 tsp. Worcestershire sauce
- 1/4 tsp. salt
- dash of pepper
- 1 lb. ground chuck
- 1 can condensed cream of celery soup
- 1 (15 oz.) can kidney beans, drained
- 1/3 c. chopped green pepper (more if you like)
- 2 oz. (1/2 c.) shredded Cheddar cheese
- Combine crumbs, eggs, onion, catsup, salt, pepper and Worcestershire sauce.
- Add ground chuck and mix well.
- Shape meat mixture into 6 patties.
- In large skillet, brown patties on both sides.
- Spoon soup over meat; top with beans and green pepper. Cook, covered, over low heat for 20 minutes.
- Sprinkle cheese over mixture; cover and cook 5 minutes more.
- Serves 6 (at my house, less)!!
- Add a fruit salad and dinner rolls for a delicious meal.
