Mandarin Orange Salad
- 2 (3 oz.) pkg. orange Jell-O
- 2 c. boiling water
- 1 (8 oz.) pkg. cream cheese, beaten soft
- 2 (11 oz. each) cans mandarin oranges, juice reserved
- 1 1/2 c. mandarin juice and cold water
- 1 (2 oz.) pkg. whipped topping mix
- 1/2 to 1 c. finely chopped nuts
- 1 c. small curd cottage cheese
- Dissolve Jell-O in the 2 cups boiling water; stir gradually into the beaten cream cheese until melted.
- Drain oranges, reserving their liquid.
- Measure and add enough cold water to equal 1 1/2 cups liquid.
- Mix into Jell-O mixture.
- Chill until slightly thickened.
- Beat chilled topping mix (Dream Whip) according to directions on package.
- Fold into Jell-O mixture along with oranges, nuts and cottage cheese.
- Turn into lightly oiled 9 x 13 x 2-inch salad dish or pan.
