Ciopinno
- 1 lb. fresh or frozen haddock (or other white fish)
- 1 (12 oz.) pkg. frozen shelled shrimp
- 1 (7 1/2 oz.) can minced clams
- 1/2 large green pepper, cut into 1/2 inch squares
- 2 Tbsp. finely chopped onion
- 1 clove garlic, minced
- 1 Tbsp. cooking oil
- 1 (16 oz.) can tomatoes, cut up
- 1 (8 oz.) can tomato sauce
- 1/2 c. dry white or red wine
- 3 Tbsp. minced parsley
- 1/4 tsp.oregano
- 1/4 tsp. basil
- salt and pepper to taste
- In 3-quart saucepan cook green pepper, onion and garlic in oil until tender.
- Addtndrained
- tomatoes,
- tomato sauce, wine, parsley,
- oregano, basil, salt
- and
- pepper.
- Bring
- to boil. Reduce heat, cover and
- simmer
- 20tinutes.
- Cut
- fish into 1 inch pieces, add fish,
- shrimp
- totomatotixture and cook about 10 minutes.
- Add undrainedtlams
- and cook about 5 minutes.
