Pasta With Vegetables
- 8 oz. fettuccine or medium noodles
- 2 Tbsp. canola oil
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1/2 c. sliced celery
- 2 c. broccoli flowerets
- 1 c. sliced mushrooms
- 1 red bell pepper, sliced
- 1 c. fresh or frozen snow peas, thawed
- 1 tsp. Italian seasoning
- salt and pepper to taste
- 3/4 c. vegetable broth
- 1/2 c. grated Parmesan cheese
- Cook pasta according to package directions; drain and keep warm.
- Heat oil in skillet; add all vegetables.
- Stir and cook until vegetables are tender-crisp, about 5 minutes.
- Add seasonings and
- toss with cooked pasta.
- Sprinkle with grated cheese.
- Serves 3 to 4.
