Seafood Salad
- 1/2 lb. cod fillet (thick as possible)
- about 1 1/2 c. water
- about 1 1/2 c. chicken broth
- 1/2 c. mayonnaise
- 1 tsp. lemon juice
- 1/8 tsp. curry powder and 1/8 tsp. chili powder
- 1/8 tsp. ground coriander seed
- 1/2 lb. fresh crabmeat or 2 (6 oz.) pkg. thawed crabmeat
- 1/4 c. toasted slivered almonds
- 1/3 c. chopped celery
- 1/4 c. halved seedless green grapes
- fresh spinach or lettuce leaves
- Place cod in pan and pour enough water and chicken broth to cover.
- Remove fish and bring liquid to boil.
- Add cod; reduce heat to low and simmer about 5 minutes or until cod is opaque and separates easily into large flakes.
- Remove fish from liquid and cool.
- Flake fish, removing skin and bones.
