Pan Seared Salmon(Prep Time: 15 Minutes; Cooking Time: 12 Minutes.)
- 1/2 c. dry white wine
- 1/2 c. white balsamic vinegar
- 2 Tbsp. brown sugar
- 2 Tbsp. orange juice
- 2 Tbsp. lemon juice
- 1/4 tsp. coarse black pepper
- 4 (6 oz.) salmon fillets (without skin; 1-inch thick)
- 1 1/2 Tbsp. extra virgin olive oil
- 1 tsp. coarse kosher salt
- 1/2 tsp. freshly ground pepper
- 1 lb. green beans, trimmed
- 4 (3-inch) strips each orange and lemon peel
- In a small saucepan, bring wine, vinegar, sugar and citrus juices to a boil over high heat. Continue to boil until reduced to about 3/4 cup, 10 to 12 minutes; remove from heat and stir in black pepper.
