Microwave Lasagne
- 1/2 to 1 lb. ground beef
- 8 lasagne noodles (uncooked)
- 1 (32 oz.) jar spaghetti sauce
- 1/2 c. Mozzarella cheese (I use more)
- 1/2 c. water
- 1 1/2 c. Ricotta or cottage cheese
- 1 egg
- 1/2 c. Parmesan cheese
- 1/2 tsp. black pepper
- Brown and crumble beef (4 minutes, plus 4 minutes).
- Stir in spaghetti sauce and water.
- Meanwhile, combine Ricotta cheese, egg and black pepper.
- In oblong baking dish, spoon 1/2 cup sauce, alternating layer of noodles, egg mixture (spread on noodles), Mozzarella cheese and sauce, forming 2 layers.
- Heat, covered, 8 minutes on High.
- Microwave 30 to 32 minutes on Medium-low or until noodles are tender.
- Top with Parmesan; let stand 15 minutes.
- Keep covered.
- Can freeze.
- Serves 6.
