Chocolate Zucchini Cake With Custard Sauce
- 1 3/4 c. sugar
- 1/2 c. vegetable oil
- 1/4 c. margarine, softened
- 2 eggs
- 1/2 c. buttermilk
- 1 tsp. vanilla
- 2 1/2 c. flour
- 1/4 c. cocoa
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. cloves
- 2 c. finely shredded zucchini
- 1/2 c. semi-sweet chocolate chips
- 1/2 c. sliced almonds
- In a large mixing bowl, beat sugar, oil and margarine. Add eggs, buttermilk and vanilla; mix well.
- Combine flour, cocoa, baking soda, baking powder, cinnamon and cloves; gradually add to creamed mixture. Stir in zucchini, chocolate chips and almonds. Pour into a greased and floured 10-inch tube pan. Bake at 325u0b0 for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.
