Jill'S Peachy Fruitcake
- 1 c. packed brown sugar
- 1 tsp. each: baking soda and cinnamon
- 1 c. chopped mixed candied fruit and peel
- 1 (16 oz.) can peaches, drained and chopped
- 1 c. prepared mincemeat
- 2 1/2 c. all-purpose flour
- 1/2 tsp. ground cloves
- 2 c. walnuts, chopped
- 1 c. raisins
- 1 (14 oz.) can sweetened condensed milk
- 1/4 c. apricot brandy
- In a very large mixing bowl, stir together flour and brown sugar, soda and spices.
- Stir in fruits, peels, nuts and raisins. Add peaches, milk, mincemeat and brandy.
- Mix well.
- Turn into 2 greased and floured loaf pans or 5 mini loaf pans.
- Bake 2 hours or until done at 300u0b0.
- Remove from pans.
- Wrap in clear wrap or foil and store in a cool place.
- Add ribbon or holly or miniature bottle of brandy to be used for soaking cloth by lucky recipient.
