Grilled Beef Salad - Yum Nuah(Servings: 12)
- 1 head romaine lettuce, cleaned and shred into bite-sized pieces
- 8 leaves fresh cilantro (Mexican parsley), cleaned and chopped
- 1/2 lb. lean beef, grilled, salted and peppered and sliced thin
- 1 medium red onion, sliced very thin
- 1 small cucumber, sliced
- 3 medium plum tomatoes (Roma), chopped
- 4 cloves garlic, minced
- 4 bird peppers (Thai chiles), sliced lengthwise
- 1 Tbsp. fish sauce
- 4 Tbsp. fresh lime juice (reconstituted will work)
- 2 Tbsp. honey
- Mix last 5 ingredients together (food processor or blender works well).
- This dressing is better if refrigerated for 3 or 4 hours.
- Remaining ingredients should be tossed together in large salad bowl.
- Add dressing when ready to serve.
