Hummus

  1. Place the beans and 1/4 cup of the lemon juice in a food processor and process until the beans are mashed but not completely pureed.
  2. Add the garlic, the remaining lemon juice and the tahini and process until the mixture is a smooth puree.
  3. With short on and off pulses, add water to thin out the hummus if it seems too thick.
  4. Season to taste with salt.
  5. To serve, spoon the hummus into a shallow bowl or a rimmed plate.
  6. Drizzle it with olive oil and sprinkle with paprika.
  7. Serve slightly chilled with warmed pita triangles.
