Tabouli(Wheat Garden Salad)
- 1 c. bulgur wheat
- 1 c. boiling water
- 1/4 c. olive oil
- 1/3 c. lemon juice
- 1 tsp. salt
- 1/4 tsp. garlic powder
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. basil
- 1/4 c. green onions, chopped
- 1 bunch fresh parsley, chopped
- 1 large tomato, chopped
- 1 (2 1/4 oz.) can black olives, sliced
- dash of cayenne pepper
- In medium bowl, pour boiling water over bulgur wheat.
- Let sit 1/2 hour.
- In shaker, combine oil, lemon juice, garlic, salt, oregano, basil and cayenne; shake well.
- Mix wheat and vegetables well.
- Pour in oil mixture.
- Mix well.
- Chill for several hours. Serve on a bed of lettuce.
- Yields ten 1/2 cup servings.
