Chicken Quiche
- 1 (9-inch) pastry shell
- 3 eggs
- 1 1/2 c. milk
- 1 Tbsp. flour
- 1 Tbsp. minced onion
- 1 tsp. parsley flakes
- 3/4 tsp. basil, crushed
- 1/2 tsp. salt
- 1/4 tsp. dried mustard
- dash of pepper
- 1 c. shredded Swiss cheese (4 oz.)
- 1 (5 oz.) can chunks style chicken, drained and chopped or 3/4 c. cooked chicken
- Place pastry shell on a preheated baking sheet in a 450u0b0 oven. Bake at 450u0b0 for 6 minutes.
- Remove from oven.
- Reduce oven to 325u0b0.
- In a bowl, beat together eggs, milk, flour, onion, parsley, basil, salt, mustard and pepper.
- Sprinkle cheese and chicken evenly over the partially baked pastry shell.
- Pour egg mixture over all.
- Bake in 325u0b0 oven about 50 minutes or until knife inserted near center comes out clean.
- Let stand 10 minutes before serving.
- Makes 6 servings.
