New Orleans Style Jambalaya

  1. Heat oil in large saucepan over medium heat.
  2. Cook sausage 5 minutes and remove from pan.
  3. Add chicken, cayenne pepper 1 tablespoons Essence to pan and cook 5 minutes.
  4. Remove from pan.
  5. Add onions, bell peppers, remaining Essences and garlic to pan and cook 8-10 minutes until vegetables are softened.
  6. Add rice and cook, stirring 3-5 minutes.
  7. Return sausage and chicken to pan.
  8. Add stock and bay leaf.
  9. Increase heat to medium-high and bring to a boil.
  10. Cover and reduce heat to low.
  11. Cook 25 minutes; remove from heat.
  12. Let stand, covered 10 minutes.
  13. Remove bay leaf and stir in green onions to serve.
