Stuffed Artichokes
- 6 to 8 large artichokes
- 2 c. Italian-style bread crumbs
- 1/2 c. grated Romano or Locatelli cheese
- 4 to 6 cloves garlic, chopped
- olive oil
- Mix bread crumbs, cheese and garlic in a large bowl.
- Clean artichokes by cutting off the stem and the tips.
- Cleanse artichoke by spreading open each leaf while running under water. Shake water out.
- Stuff artichokes with bread crumb mixture
- by spreading open and filling each leaf.
- Place stuffed artichokes in a large pot; sprinkle olive oil all over artichokes.
- Fill pot with approximately 1 inch of water; bring to a boil.
- Cover and reduce heat; cook for approximately 1 to 1 1/2 hours.
- Keep checking water in pot.
- Add water when water evaporates. Artichokes are done when outer leaves start breaking off.
