Potato Salad From Grandma Noyes
- 3 lb. new potatoes
- 2 large or 3 medium celery stalks
- 8 hard-boiled eggs
- 1 pt. Kraft (regular or light) Miracle Whip (not mayo)
- paprika
- salt and pepper to taste
- Cook potatoes with skins on.
- Cool, peel and cut into bite size pieces.
- Place in large bowl.
- Cook and peel eggs.
- Chop 6 eggs, using egg slicer 2 ways.
- Add to bowl.
- Slice 2 eggs, using egg slicer 1 way and set aside for garnish.
- Finely chop celery stalks and add to bowl.
- Spoon 3/4 jar of Miracle Whip into bowl and mix until all potatoes are well covered.
- Add salt and pepper to taste and mix in.
- Garnish top with reserved egg slices and lightly sprinkle with paprika.
- Chill and serve.
- (This salad is best served chilled, not ice cold.)
- Serves 15 to 18.
