Applesauce Cake
- 1 lb. butter
- 3 c. sugar
- 3 c. stewed apples (dried, fresh, unsweetened)
- 1 1/2 tsp. soda (stirred in apples)
- 4 1/2 c. flour
- 1 box seedless raisins (rolled in flour)
- 4 eggs
- 1 1/2 tsp. mace
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. cloves
- 1 tsp. vanilla
- 1/2 lb. candied cherries (floured)
- 1/2 lb. candied pineapple (floured)
- 4 c. pecans (floured)
- Cream the sugar and butter.
- Beat egg yolks well and add.
- Add 1/2 teaspoon soda and 1 teaspoon vanilla in half the apples.
- Add to mixture.
- Mix the spices, nuts, fruits and raisins in all the flour.
- Alternate with flour mixture and stiffly beaten egg whites. Add remaining applesauce with 1 teaspoon soda.
- Put soda on top of applesauce and stir.
- Add to other mixture.
- Mix well.
- Bake in slow (very) oven in greased and floured tube pan about 2 1/2 hours. Use 1 teaspoon cocoa for dark cake.
