Cabbage Lasagna
- 1 pound of ground turkey
- 1 cup chopped green onion
- 1/2 cup green pepper, chopped
- 1 medium cabbage, shredded
- 1/2 teaspoon oregano
- 1 teaspoon morton lite salt
- 1/8 teaspoon pepper
- 1 (18oz) can tomato paste
- 8oz low fat mozzarella cheese, shredded
- Saute ground turkey, onion, and green pepper until meat is browned.
- Boil cabbage until tender.
- Save 2 cups liquid and drain off excess.
- Combine 2 cups liquid, oregano, pepper, salt, and tomato paste and simmer on low heat for 4 minutes.
- Add meat, onion, and pepper to mixture.
- In a 9x13 pan pour half of meat mixture, then add cabbage, Pour remaining meat mixture and then top with shredded mozzarella.
- Bake at 400 until cheese is browned, about 30-45 minutes.
