King Ranch Chicken
- 1 pkg. flour tortillas
- 1 chicken or 4 chicken breasts
- 2 lb. Cheddar cheese, grated
- 1 can Ro-Tel tomatoes
- 2 cans cream of chicken soup
- 1 can cream of mushroom soup
- 1 large onion
- 2 bell peppers
- dash of chili powder
- dash of garlic salt
- 2 Tbsp. butter
- Boil and debone chicken and save broth.
- Saute onion and peppers in butter.
- Mix with soups and tomatoes.
- Dip tortillas in chicken broth and cover 9 x 13-inch pan.
- Add layer of chicken, soup mixture and cheese, then repeat layers until all ingredients are used.
- Sprinkle top with chili and garlic powder.
- Cover with aluminum foil and bake at 350u0b0 for 35 to 45 minutes.
