Bread And Butter Pickles
- 4 medium cucumbers (unpared)
- 1 green pepper
- 1/4 c. pickling salt
- 2 1/2 c. sugar
- 1 Tbsp. mustard seed
- 3/4 tsp. ground turmeric
- 3 medium onions
- 1 clove garlic
- crushed ice
- 1 1/2 c. cider vinegar
- 3/4 tsp. celery seed
- 1/8 tsp. ground cloves
- Slice cucumbers, onions and peppers.
- Combine vegetables with garlic and salt; cover with crushed ice.
- Mix thoroughly.
- Allow to stand at room temperature 3 hours; rinse and drain well. Discard garlic.
- Heat remaining ingredients in large saucepan to boiling.
- Add vegetables; heat to boiling.
- Remove; fill hot sterilized pint jars with hot vegetables and liquid, leaving 1/2-inch headspace.
- Seal and process in boiling water bath for 15 minutes.
- Makes about 4 pints.
