Ham Enchiladas

  1. In bowl, combine
  2. ham,
  3. onion
  4. and green pepper.
  5. Place 1/3 cup
  6. of
  7. mixture
  8. and 3 tablespoons shredded cheese at one end
  9. of each tortilla; roll up.
  10. Arrange tortillas, seam side down, in
  11. a greased 12 x 7 1/2 x 2-inch baking dish.
  12. Combine eggs,
  13. cream, flour, salt, garlic powder and hot pepper sauce. Pour
  14. over tortillas.
  15. Cover and refrigerate several hours or overnight. Bake,
  16. uncovered, in 350u0b0 oven 45 to 50 minutes or until
  17. set. Sprinkle
  18. with
  19. remaining cheese.
  20. Bake 3 minutes more or
  21. until cheese is melted.
  22. Let stand 10 minutes.
  23. Makes 8 servings.
