Ham Enchiladas
- 2 c. ground fully cooked ham
- 1/2 c. sliced green onions
- 1/2 c. chopped green pepper
- 2 1/2 c. shredded Cheddar cheese
- 8 (7-inch) flour tortillas
- 4 beaten eggs
- 2 c. light cream or milk
- 1 Tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- few drops bottled hot pepper sauce
- In bowl, combine
- ham,
- onion
- and green pepper.
- Place 1/3 cup
- of
- mixture
- and 3 tablespoons shredded cheese at one end
- of each tortilla; roll up.
- Arrange tortillas, seam side down, in
- a greased 12 x 7 1/2 x 2-inch baking dish.
- Combine eggs,
- cream, flour, salt, garlic powder and hot pepper sauce. Pour
- over tortillas.
- Cover and refrigerate several hours or overnight. Bake,
- uncovered, in 350u0b0 oven 45 to 50 minutes or until
- set. Sprinkle
- with
- remaining cheese.
- Bake 3 minutes more or
- until cheese is melted.
- Let stand 10 minutes.
- Makes 8 servings.
