Meat Loaf With Pecan Stuffing
- 1 1/2 lb. ground beef
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1 tsp. salt
- 1 Tbsp. Worcestershire sauce
- 1 c. white bread crumbs
- 1/2 c. milk
- 2 eggs
- 1/4 c. fat
- 2 c. whole wheat bread crumbs
- 1/2 c. chopped celery
- 1/4 tsp. black pepper
- 3/4 c. meat stock or water
- 1/2 c. chopped pecans
- Combine
- beef
- with
- green
- pepper,
- onion, salt, sauce, white bread crumbs, milk and 1 egg.
- Mix thoroughly.
- Place 1/2 of this mixture in bottom of greased loaf pan.
- Combine 1 egg, fat,
- whole wheat
- bread crumbs, celery, black pepper and meat stock
- or water.
- Add
- to this chopped pecans; mix thoroughly. Spread
- on top of meat mixture.
- Arrange remaining meat mixture on top
- of pecan
- stuffing.
- Bake
- at 350u0b0 for 1 1/2 hours and cool slightly before removing from pan.
- Serves 10.
