Yellow Angel Cake
- 6 egg whites
- 3/4 tsp. cream of tartar
- 6 egg yolks
- 1/2 c. cold water
- 1 1/2 c. sugar
- 1/2 tsp. vanilla
- 1/4 tsp. almond extract
- 1/2 tsp. lemon extract
- 1 1/2 c. sifted cake flour
- 1/4 tsp. salt
- Beat egg whites in small mixer bowl until foamy; add cream of tartar and beat until stiff peaks form.
- Beat egg yolks in small bowl of electric mixer until thick and lemon colored.
- Add cold water and continue beating until thick.
- Transfer to large mixer bowl.
- Add sugar, gradually beating until blended.
- Add vanilla, almond and lemon extracts.
- Fold in flour and salt.
- Fold beaten egg whites into egg yolk mixture.
- Bake in ungreased 10-inch tube pan in 325u0b0 oven for 1 hour, or until done.
- Invert to cool.
- Frost with Creamy Yellow Frosting.
