Apple And Sausage Omelet
- 5 tsp. butter
- 4 breakfast sausage links, cut into 1/4-inch slices
- 1 potato, peeled and very thinly sliced
- 1 medium onion, cut into rings
- 1 small apple, peeled and thinly sliced
- 6 eggs
- 1/4 c. water
- 1 Tbsp. parsley
- 1 Tbsp. oil
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- Melt 1 teaspoon butter in skillet over medium heat.
- Add sausages and cook until brown.
- Drain on paper towel.
- Reserve. Melt remaining butter in nonstick skillet.
- Add potato and onion and cook about 5 minutes to soften.
- Add apple and cook 5 more minutes, stirring occasionally with wooden spoon.
- Whisk eggs, water and parsley in a bowl, reserve.
- After potato mixture has cooked for 10 minutes, add oil, salt, pepper and reserved sausage. Stir and pour egg mixture into skillet.
- Swirl pan so that eggs spread.
- Cover skillet and cook over medium heat 15 minutes, or until eggs are set.
- Remove to serving platter.
- Serve immediately. Serves 2 to 4.
