Smoked Salmon And Gruyere Cheesecake With Mini Bagels(16 To 20 Servings)
- 1/2 c. grated imported Parmesan cheese
- 1 medium onion, finely chopped
- 3 Tbsp. olive oil
- 1 large clove garlic, finely minced
- 1/3 c. fresh dill, finely chopped
- 1/2 lb. smoked salmon
- pinch of cayenne
- salt and pepper to taste
- 2 lb. cream cheese
- 3 Tbsp. wine vinegar
- 1/4 c. whiskey
- 1/4 lb. shredded Gruyere cheese
- 5 eggs
- 2 doz. mini bagels
- Preheat oven to 300u0b0.
- Grease a 9-inch cheesecake pan with butter.
- Line bottom with a buttered wax paper circle and dust the bottom and sides of pan with 3 tablespoons of the Parmesan cheese. Set aside.
- Saute the onion in the oil over medium heat until soft, about 3 minutes.
- Remove from heat.
- Add garlic, dill and salmon.
- Season with salt, pepper and cayenne and set aside.
